Why it works: Almond and vanilla match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and 3,961 recipes mention both. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much aroma chemistry they share, and how many recipes mention both.

    Shared aroma: 2-heptanol (bitter, floral).

Sugar and vanilla share little aroma chemistry, yet 35,032 recipes mention both: they likely work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the cream into a sliceable blanc-mange when cooled.
Cream
Provides richness and fat, giving the set dessert a smooth, creamy texture.
Loaf sugar
Adds sweetness and helps balance the richness of the cream.
Almonds
Add nutty flavour and a fine, slightly textured body to the set dessert.

The step that matters

Adding the wine. Wine added while the mixture is hot can be driven off in flavour and may disturb the set. Adding it once the mixture has cooled keeps its aroma and lets the isinglass set evenly.

Flavor stand-ins for the almond

How well each one fits the dish's main ingredients (cream, sugar, vanilla, wine):

  1. Chestnutabout as good a flavor fit
  2. Almondthe original
  3. Hazelnutabout as good a flavor fit

Fit is the average pairing score against cream, sugar, vanilla, wine. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
