Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Arrow-root
Thickens the milk into a smooth, sliceable set custard as it cooks.
Milk
Forms the liquid base that the thickener swells and sets in.
Cream
Adds richness and a silkier, fuller mouthfeel to the finished blancmange.
Chocolate mange
Adds chocolate flavor and color, and contributes some thickening with the arrow-root.

The step that matters

Stirring the boiling milk into the arrow-root mixture. Arrow-root lumps form if the starch meets hot liquid unevenly. Stirring well while pouring disperses the starch so it thickens smoothly rather than clumping.
