What each ingredient does

Thick sweet cream
Provides rich fat and body, giving the frozen dessert its creamy texture.
Strawberries
Supply flavour, colour and juice that give the cream its fruit taste.
Granulated sugar
Sweetens the berries and draws out their juice through maceration.
White sugar
Sweetens the cream and softens the texture of the frozen result.

The step that matters

Whipping the cream until frothy. Whipping incorporates air into the cream, which gives the frozen dessert lightness. Overwhipping can turn the cream grainy or buttery, so stop once it is frothy.
