Strawberry Wine
Ingredients
Directions
Prepare the must
Mash the strawberries in a large container.
Add ½ gallon of boiling water to the mashed berries.
Let the mixture stand for 24 hours.
Strain the mixture and add 3 pounds of brown sugar.
Let it stand for 36 hours, skimming off any impurities that rise to the top.
Ferment and seal
Transfer the liquid to a cask, reserving some to top off as it escapes.
Fill the cask each morning.
Cork and seal tightly after fermentation is complete.

What each ingredient does
- Strawberries
- Provide the fruit flavour, aroma and the sugars that yeast ferments into alcohol.
- Brown sugar
- Feeds the yeast during fermentation, producing alcohol and carbon dioxide, and adds sweetness.
- Boiling water
- Extracts flavour and colour from the mashed berries and dissolves the sugar.
The step that matters
Topping off the cask each morning. Fermentation releases carbon dioxide and pushes liquid out, and leaving air space lets spoilage microbes and oxidation take hold. Keeping the cask full protects the wine's flavour.
