Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the asparagus

  1. Wash the asparagus tips.

  2. Boil them in salted water for 15 minutes.

  3. Drain in a colander.

Prepare the bread

  1. Cut the bread into 1.5‑inch thick slices.

  2. Remove the crusts.

  3. Hollow out the center to form a box.

  4. Brush the outside of the bread with melted butter.

  5. Bake in a 400°F (200°C) oven until golden brown.

Make the sauce and serve

  1. Fill the hollowed bread with the asparagus tips.

  2. Keep warm on a folded napkin.

  3. Heat the milk in a double boiler.

  4. Beat the egg yolks until light.

  5. Stir them into the hot milk until it thickens slightly.

  6. Remove from heat.

  7. Add the butter, salt, and pepper.

  8. Pour the sauce into the bread boxes.

  9. Serve immediately.

What each ingredient does

Asparagus tips
Provide the main vegetable filling and fresh, tender texture.
Bread
Forms a crisp, golden edible box that holds the filling and sauce.
Milk
Forms the base of the sauce, adding moisture and creaminess.
Egg yolks
Thicken the warm milk into a silky sauce as they set gently with heat.
Butter
Browns the bread's outside and adds richness to the sauce.

The step that matters

Stir the egg yolks into the hot milk. Egg yolks thicken when heated gently; if the milk is too hot or heated too quickly, the proteins can scramble and the sauce turns grainy. Removing it from heat once it thickens slightly prevents this.

Swap the asparagus
