What each ingredient does

Cucumbers
Provide the main body of the dish, staying moist and tender inside while the outside fries.
Egg
Acts as a binder so the bread crumbs stick to the cucumber slices.
Bread crumbs
Form a crisp, browned coating that gives the slices their crunch when fried.
Lard or dripping
Conducts heat for frying and adds fat that promotes browning and a crisp crust.

The step that matters

Frying the coated slices. Cucumber holds a lot of water. If the fat is not hot enough or the pan is overcrowded, the slices steam instead of browning, and the coating can turn soggy or fall off. Frying in batches at steady heat keeps the crust crisp.
