Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the onions

  1. Boil the onions without peeling for 1 hour.

  2. Drain, remove the skins, and cut out the center of each onion.

Fill and bake

  1. Mix the chopped ham or tongue with the bread crumbs, melted butter, cream, salt, and pepper.

  2. Fill the onions with the mixture.

  3. Place them in a baking pan, baste with melted butter, and dust with bread crumbs.

  4. Bake at 300°F (150°C) for 1 hour.

Serve

  1. Serve with cream sauce poured over them.

What each ingredient does

Onions
Form the edible shell that holds the filling and softens into a tender, sweet base when cooked.
Bread crumbs
Absorb the butter and cream to bind the filling and add body, while the dusting crisps and browns on top.
Ham or tongue
Adds savory, meaty flavor to the filling.
Butter
Adds richness and fat, and helps the crumb topping brown during baking.
Cream
Adds moisture and richness to the filling and keeps it from drying out.

The step that matters

Cutting out the center of each onion. Cutting too thin a wall can tear or leave the onion unable to hold the filling, while cutting too thick leaves the onion underseasoned and slow to soften. Keeping a sturdy but tender shell lets the filling stay inside during baking.

Swap the onion

How well each one fits the dish's main ingredients (ham, bread, butter, cream, pepper):
