Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sorrel
Provides the main flavor and bright, sharp acidity that defines the puree.
Butter
Adds fat and a rounded, smooth richness to the finished puree.
Veal stock
Adds savory depth and body to the puree.

The step that matters

Boil uncovered for 10 minutes. Sorrel loses its color and turns dull or olive-brown if overcooked, and it can become stringy. Boiling in plenty of water for a set time keeps the green bright and the texture tender before chopping.

Swap the sorrel

How well each one fits the dish's main ingredients (butter, veal, pepper):

  1. Parsleyfits better
  2. Sagefits better
  3. Thymefits better
  4. Sorrelthe original

Fit is the average pairing score against butter, veal, pepper. Candidates are from the same food group and used in at least 100 recipes.
