Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Provide the bulk of the preserve and its tart, firm body.
Lemons
Add acidity and bright flavor that balance the sugar.
Granulated sugar
Sweetens the preserve and helps it set into a thick, spreadable texture.
Ginger
Adds warm, aromatic spice that complements the tomatoes and lemon.

The step that matters

Skimming during the first long simmer. Skimming removes foam and impurities that rise to the surface as the fruit cooks, keeping the preserve clear and clean-tasting. Cooking slowly keeps the slices intact rather than breaking them down.

Swap the tomato

How well each one fits the dish's main ingredients (lemon, sugar, ginger):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Broccolifits better
  4. Tomatothe original

Fit is the average pairing score against lemon, sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
