What each ingredient does

White soup beans
Break down into a thick puree that gives the soup its body.
Bacon
Adds fat and smoky, savory flavor to the broth as it cooks.
Soup bone
Releases collagen and flavor into the water, adding richness and body.
Onion
Contributes aromatic sweetness and savory depth as it softens in the soup.

The step that matters

Simmer gently until the beans are tender. Boiling vigorously can break the skins and cloud the broth, while gentle simmering softens the beans evenly so they puree smoothly.

Swap the onion

How well each one fits the dish's main ingredients (beans, pepper):

  1. Capsicumfits better
  2. Spinachfits better
  3. Tomatofits better
