What each ingredient does

Lentils
Form the main body of the soup and thicken it as they break down during simmering.
Butter
Carries the flavor of the aromatics and adds richness when frying the onion mixture.
Onion
Frying until light brown adds sweetness and savory depth to the soup.
Vegetable or chicken stock
Provides the cooking liquid that softens the lentils and carries flavor through the soup.

The step that matters

Press the soup through a fine sieve. Lentils keep softening as they cook, and pressing them through a fine sieve breaks down the remaining solids into a smooth, uniform texture. Pressing too little leaves the soup grainy.
