Pasta Alla Parigina

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the paste

  1. Grind the sweet almonds with the sugar, adding the egg white and vanilla until you have a smooth paste.

  2. Fold in the 6 beaten egg whites and the flour.

Shape and bake

  1. Roll out the paste on lightly buttered parchment paper into squares about 10 cm (4 inches) wide and 0.5 cm (¼ inch) thick.

  2. Bake in a cool oven at 300°F (150°C) for 5 minutes.

  3. Remove the parchment and store in a cool place until needed.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main flavour and a rich, moist paste base.
Sugar
Adds sweetness and helps the ground almonds form a smooth paste.
Egg whites
Add structure and lightness to the paste when folded in.
Flour
Adds a small amount of structure so the paste holds its shape.

The step that matters

Rolling the paste to even thickness. Uniform thickness means the squares bake and dry evenly, so thin spots do not overbake while thick spots stay soft.

Swap the vanilla

How well each one fits the dish's main ingredients (almond, sugar, egg, flour, butter):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against almond, sugar, egg, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
