Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Cook the sugar in a clean saucepan without greasing it.

  2. Once the sugar reaches 30 degrees Celsius, flavor it with a bit of essence and color it as desired.

  3. Add a little spirit to prevent fermentation.

  4. Minimize handling of the sugar to avoid crystallization.

  5. Pour the prepared sugar into molds of your choice, dust lightly with powdered sugar, and place the molds in a warm area for about 12 hours.
