To Bone a Turkey, or Any Other Fowl

Ingredients

Directions

Debone the bird

  1. Begin at the wing and carefully remove the flesh from the bone with a sharp knife, scraping downward.

  2. Do not tear or break the skin; sew any breaks before cooking.

  3. Loosen the flesh from the breast, back, and thighs.

  4. Draw the skeleton from the flesh by the neck, like removing a glove.

Stuff and cook

  1. Restore the shape by stuffing with force meat or prepared stuffing.

  2. Bake or roast for about 3 hours.

Serve

  1. Serve cold, garnished with currant jelly and slices around the dish.

What each ingredient does

Turkey or other fowl
Provides the whole meat that is boned, stuffed, and roasted into the dish.
Force meat or stuffing
Fills the emptied bird to restore its shape and add moisture while it cooks.

The step that matters

Do not tear or break the skin. The skin holds the stuffing and keeps moisture in during roasting. Any tear lets juices escape and stuffing leak out, so sew breaks closed before cooking.

Swap the currant

How well each one fits the dish's main ingredients (turkey, meat):

  1. Figfits better
  2. Coconutfits better
  3. Applefits better
  4. Currantthe original

Fit is the average pairing score against turkey, meat. Candidates are from the same food group and used in at least 100 recipes.
