Chicken or Cracker Panada

Ingredients

Directions

Prepare the chicken

  1. Boil the chicken in 1 quart of water for 30 minutes.

  2. Remove the chicken from the water and let it cool.

  3. Once cool, remove the skin and pound the white meat to a paste in a mortar with a little of the cooking water.

Make the broth

  1. Add salt and nutmeg, then more water to achieve a thick drink consistency. Boil for 3-4 minutes.

  2. Alternatively, pour boiling water over 2 crackers and let them simmer for 5 minutes. Sweeten and flavor a beaten egg to taste, then add it to the crackers.

  3. For a wine version, boil 1 part wine with 3 parts water, flavor to taste, and stir in grated bread or cracker, then give it one boil.

What each ingredient does

Chicken
Its white meat is pounded to a paste that gives the broth body and a thick drink consistency.
Crackers
Starch from the crackers thickens the liquid and gives the cracker version its body.
Egg
Beaten egg enriches the cracker version and adds richness and a softer texture.
