Puff Paste

Ingredients

Directions

  1. Sift 1 pound of flour into a bowl.

  2. Cut the butter and lard into the flour using a knife until the mixture resembles small bits.

  3. Sprinkle the ice water over the mixture and mix lightly with the knife.

  4. Flour a surface measuring 24 inches by 18 inches.

  5. Place the dough in the center of the floured surface, flour the rolling pin, and roll the dough out to nearly cover the surface.

  6. Sift a light coating of flour over the dough, then fold it in thirds lengthwise and across to form a rectangle about 8 inches long and 7 inches wide.

  7. Turn the dough over, add more flour underneath and on the surface, and roll it out again.

  8. Sift with flour, fold, and roll out a third time, then sift again.

  9. Roll the dough lightly into a scroll shape, cut it in half, place on a plate, and refrigerate for at least 15 minutes before use.
