Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells as it soaks and boils, thickening the milk into a creamy body.
Egg yolks
Thicken the cream as they set with heat, giving it a custard-like richness.
Milk
Forms the liquid base that the tapioca thickens into a cream.
Egg whites
Whipped to stiff foam, they form a light topping that browns in the oven.
Crushed sugar
Sweetens the cream and helps the egg yolks blend smoothly into it.

The step that matters

Stir until the mixture thickens like custard. Egg yolks can curdle or scramble if heated too quickly. Stirring over gentle heat keeps the cream smooth while the yolks set and thicken it.
