What each ingredient does

Chicken
Provides the main body and rich meaty flavor of the soup as it simmers.
Flour
Coats the chicken so it browns and helps thicken the broth slightly.
Butter
Adds fat and rich flavor to the frying base and browning of the onion.
Okra
Releases natural thickening starch that gives the soup body.
Filet powder
Adds a distinctive earthy aroma and flavor when stirred in at the end.

The step that matters

Browning the chicken and onion. Frying the flour-dredged chicken and onion until golden builds browned flavor through the Maillard reaction, which gives the finished soup depth. Pale, undercooked frying leaves the broth flat.

Swap the onion
