Scalloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Drain the oysters and lay them on a towel.

  3. Mix the grated nutmeg, cayenne pepper, and salt together in a bowl.

  4. Grease two baking dishes with bits of butter.

Layer and bake

  1. Layer the bottom of each dish with grated bread, then add a layer of oysters, sprinkling lightly with the nutmeg mixture.

  2. Repeat the layers, finishing with a thick layer of bread dotted with butter on top.

  3. Bake for 20 minutes.

Serve

  1. Serve on a plate, covering the dish with a folded napkin.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main filling and flavor of the dish.
Grated bread
Forms the body of the dish and soaks up moisture from the oysters.
Butter
Adds richness and helps the top layer brown in the oven.

The step that matters

Layering the oysters and bread. Oysters release liquid as they cook, and the bread absorbs it so the dish stays moist rather than watery. Keeping the layers even helps the filling cook through evenly.

Swap the nutmeg

How well each one fits the dish's main ingredients (bread, butter, oyster, pepper):

  1. Parsleyfits better
  2. Sagefits about as well
  3. Thymefits about as well
  4. Nutmegthe original

Fit is the average pairing score against bread, butter, oyster, pepper. Candidates are from the same food group and used in at least 100 recipes.
