Fried Veal

Ingredients

Directions

Prepare the veal

  1. Cut the salt pork into thin slices and fry slowly until enough fat is rendered.

  2. Sprinkle the veal with salt and pepper, then lay it in the pan and brown on both sides, cooking slowly.

  3. Once done, place the veal on a platter with the pork.

Make the sauce and serve

  1. Pour nearly all the fat from the frying pan, then add the cream mixed with the flour.

  2. Let it simmer for a few minutes, then pour the sauce over the veal and serve.

What each ingredient does

Veal
Is the main protein, browned in the rendered fat to develop flavour and a golden surface.
Salt pork
Renders fat for frying the veal and adds savoury, salty flavour to the dish.
Cream
Forms the base of the sauce, adding richness and a smooth, silky body when simmered.
Flour
Thickens the cream as it simmers, giving the sauce body so it coats the veal.

The step that matters

Browning the veal slowly. Veal browns best over moderate, steady heat. Too high a heat can scorch the outside before the meat cooks through, while cooking slowly lets the surfaces develop even colour and flavour.
