Why it works: Pepper and marjoram match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 2,609 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Marbled Veal

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the veal

  1. Boil the veal and scraps in cold water until tender.

  2. Remove the veal, leaving the scraps and bone to stew longer.

Layer and set

  1. Slice the cold veal and layer it in a mould with sliced egg, salt, pepper, marjoram, ham, and a little flour.

  2. Reserve some egg for the border around the last layer.

  3. Press the layers gently together and pour in the stock from the kettle.

  4. If no stock, stir in melted gelatine.

Bake and serve

  1. Cover the mould and bake at 350°F (175°C) for 1.5 hours.

  2. Turn out from the mould and serve cold the next day.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat that forms the body and flavour of the marbled loaf.
Eggs
Sliced hard-boiled egg adds visible pattern and a firm, pale contrast to the meat.
Gelatine
Sets the liquid into a firm jelly when stock is not available.
Flour
Lightly thickens the layers so the filling holds together when sliced.
Boiled ham
Adds savoury, salty flavour and a contrasting colour to the layers.

Swap the marjoram

How well each one fits the dish's main ingredients (veal, egg, pepper, ham, flour):

  1. Parsleyfits better
  2. Turmericfits about as well
  3. Nutmegfits about as well
