Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe tomatoes
Provide the main body, pulp and flavour base that the reduction concentrates into ketchup.
Garlic
Adds pungent aroma that mellows during the long boil.
Sea salt
Seasons the sauce and helps preserve it.

The step that matters

Reducing the strained tomatoes to one third. Boiling off most of the water concentrates the sugars and acids and thickens the pulp. If reduced too little, the ketchup stays thin and watery; if boiled too long, it can scorch on the bottom of the pan and turn bitter.

Swap the mace

How well each one fits the dish's main ingredients (tomato, ginger, clove, pepper, garlic):

  1. Cuminfits better
  2. Corianderfits better
  3. Oreganofits better
  4. Macethe original

Fit is the average pairing score against tomato, ginger, clove, pepper, garlic. Candidates are from the same food group and used in at least 100 recipes.
