What each ingredient does

Chicken or veal
Provides the savoury meat that forms the outer layer and gives body to the coating.
Ham
Adds salty, savoury flavour to the meat coating.
Flour
Thickens the milk into a cream that helps bind the meat mixture together.
Milk
Makes the flour thickened binding moist and smooth, keeping the meat mixture tender.
Hard-boiled eggs
Form the centre of each scotch egg and stay firm when the coating is fried.
Egg yolks
Act as a glue so the crumbs stick to the meat coating and brown in frying.

The step that matters

Frying at the right heat. If the lard is too cool the coating absorbs fat and turns greasy; if it is too hot the crumbs brown before the meat layer heats through. The bread test helps judge a steady, moderate heat.
