Welsh Rarebit

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

  1. Toast the bread quickly without drying it out.

  2. Cut off the crust evenly with a sharp knife.

  3. Butter the bread and cover it with thin slices of cheese, lightly spread with made mustard.

  4. Place the bread on a pie plate and bake in a hot oven (400°F / 200°C) until the cheese melts.

  5. Cut into halves or thirds and serve immediately.

Recipe from a historical cookbook (Internet Archive).

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
