What each ingredient does
- Potatoes
- Provide starch and body, giving the starter a thick, mashed texture that feeds the yeast.
- Yeast
- Ferments the sugar, producing gas that forms bubbles and makes the starter rise.
- White sugar
- Provides food for the yeast, fuelling fermentation.
The step that matters
Adding the yeast while the mixture is lukewarm. Yeast is killed by high heat, so adding it to a hot mixture can stop fermentation. A lukewarm mixture is warm enough to activate the yeast without harming it.
