Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Sift the baking soda and cream of tartar with the flour.

  2. Cream the butter, then add the sugar and enough milk to mix easily.

  3. Add the egg yolks and beat well.

  4. Alternately add the milk, beaten egg whites, and flour to the mixture.

  5. Butter a baking sheet and drop spoonfuls of batter onto it.

  6. Sprinkle a few currants over each spoonful.

  7. Bake at 400°F (200°C) until rich brown.

  8. Break apart the cakes when taken from the oven and cool on a wire rack.
