What each ingredient does

Pickled fat pork
Renders fat for frying and adds savory, salty flavor to the base.
Potatoes
Provide body and starch that soften and give the chowder its hearty texture.
Clams
Supply the main seafood flavor and tender texture to the chowder.
Flour
Thickens the milk and broth into a smooth, creamy consistency when brought to a boil.
Milk
Adds creaminess and richness, softening the chowder's flavor and texture.
Onion
Browning builds sweet, savory depth in the base before liquids are added.

The step that matters

Mixing the flour into the milk. Flour clumps if added dry or unmixed; blending it smoothly into cold milk first lets starch disperse, so it thickens evenly when the chowder boils.

Swap the onion

How well each one fits the dish's main ingredients (pork, potato, pepper, clam, flour, milk):

  1. Capsicumfits better
