What each ingredient does

Chicken
Provides the main protein and, as it simmers, the savory body of the dish.
Flour
Thickens the cooking liquid into a smooth sauce when cooked with butter.
Butter
Adds richness and fat that carries flavor and smooths the flour mixture.
Egg yolks
Enrich and thicken the sauce gently, giving it a silky texture.
Cream
Adds richness and a smooth, mellow body to the sauce.

The step that matters

Adding the egg yolks. Egg yolks thicken when heated but can curdle or scramble if the liquid boils. Keep the sauce at a gentle simmer or below, and add the yolks off the heat or as it simmers only briefly, so the sauce stays smooth.

Swap the onion

How well each one fits the dish's main ingredients (chicken, thyme, marjoram, pepper, flour, egg, butter):

  1. Leekfits better
  2. Shallotfits better
  3. Capsicumfits better
