Directions

Prepare

  1. Cut off the small bone at the end of the leg of mutton, leaving the meat to cover the joint.

Boil the mutton

  1. Place the mutton in a kettle of cold water and bring to a boil quickly.

  2. Once boiling, reduce heat and simmer slowly until the meat is cooked through.

Make the sauce and serve

  1. In a separate bowl, stir 1/3 cup of capers into 1 pint of drawn butter.

  2. Serve some of the caper butter over the mutton and the rest in a gravy boat.

What each ingredient does

Mutton leg
Provides the main body of the dish, becoming tender through slow simmering.
Drawn butter
Adds richness and moisture, coating the meat and carrying the flavour of the capers.
Capers
Add sharp, acidic bite that cuts through the richness of the butter and mutton.

The step that matters

Simmer slowly after boiling. Once the water reaches a boil, lowering the heat to a gentle simmer keeps the meat tender. A hard, rolling boil toughens muscle fibres and can leave the outside overcooked before the centre is done.

Swap the capers

How well each one fits the dish's main ingredients (mutton, butter):

  1. Pepperfits better
  2. Parsleyfits about as well
  3. Capersthe original
  4. Thymefits about as well

Fit is the average pairing score against mutton, butter. Candidates are from the same food group and used in at least 100 recipes.
