Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Remove the bone from the leg of mutton and skewer it securely.

  2. Trim the mutton nicely and stick cloves into it about one inch apart.

  3. Place slices of salt pork under and over the mutton in a dripping pan.

  4. Pour the vinegar over the mutton.

Bake and serve

  1. Bake at 300°F (150°C) for four hours, basting every twenty minutes.

  2. Serve cold.

What each ingredient does

Leg of mutton
Forms the main body of the roast, providing the meat that is cooked and served.
Salt pork
Adds fat and savoury flavour, and keeps the lean mutton moist as it bakes.
Vinegar
Adds acidity that sharpens the flavour of the meat during the long, slow bake.
Cloves
Contribute a warm, aromatic spice flavour that penetrates the meat.

The step that matters

Basting every twenty minutes during the four-hour bake. Lean mutton dries out over a long, slow bake. Regular basting with the pan juices keeps the surface moist and carries fat and flavour back into the meat.
