Roast Fillet of Veal

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the veal

  1. Remove the bone from the veal and fill the cavity with a stuffing made of bread crumbs, chopped salt pork, pepper, salt, and sweet marjoram.

  2. Make deep incisions in the veal and fill them with the stuffing or insert strips of salt pork.

  3. If available, use a larding needle to insert strips of pork without cutting the veal.

  4. Bind the veal tightly with twine and place it in a roasting pan with a little water.

Roast

  1. Baste often and roast in a 400°F (200°C) oven until thoroughly cooked, avoiding rare veal.

Make the gravy

  1. After cooking, pour off the fat from the dripping pan to make gravy.

  2. Add broth or water if necessary, season with pepper and salt, and thicken with browned flour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal fillet
Forms the main meat that is roasted to be tender and fully cooked through.
Bread crumbs
Absorb juices from the salt pork and marjoram, keeping the stuffing moist inside the meat.
Salt pork
Adds fat and savory flavor that bastes the lean veal as it roasts.
Flour
Browned flour thickens the pan juices into gravy.

The step that matters

Roasting until thoroughly cooked. Veal must reach a fully cooked temperature throughout, since a thick roast can look done outside while the center stays undercooked. Basting keeps the surface moist while it cooks.

Swap the marjoram

How well each one fits the dish's main ingredients (veal, bread, pork, pepper, flour):

  1. Sagefits about as well
  2. Marjoramthe original
  3. Parsleyfits about as well
  4. Thymefits less well

Fit is the average pairing score against veal, bread, pork, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
