Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold veal
Is the main protein, cut thin so it heats through quickly in the sauce.
Flour
Dredges the veal and thickens the pan liquid into a smooth sauce.
Butter
Fat for frying that adds richness and promotes browning on the veal.
Onion
Adds savoury flavour and sweetness as it browns in the butter.

The step that matters

Blending the flour before adding it to the pan. Flour added directly to hot liquid clumps; blending it smooth first lets it disperse evenly so the sauce thickens without lumps.

Swap the onion

How well each one fits the dish's main ingredients (veal, flour, butter, pepper, lemon):

  1. Shallotfits better
  2. Leekfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against veal, flour, butter, pepper, lemon. Candidates are from the same food group and used in at least 100 recipes.
