What each ingredient does

Cranberry beans
Form the bulk of the dish and give it a soft, hearty texture when cooked.
Sweet corn
Adds sweetness and tender kernels that contrast with the beans.
Salt pork
Adds savory fat and flavor that seasons the whole dish as it cooks.
Butter or cream
Adds richness and a smooth, silky finish to the beans and corn.

The step that matters

Stir in butter or cream. Fat added at the end coats the beans and corn and gives a smooth texture. Adding cream to a wet dish can thin it, so excess liquid should be poured off first.
