What each ingredient does

Eggs
Egg whites set around the yolk as they poach, forming the soft, tender centre of the dish.
Bread
Toasted base that gives a crisp, sturdy surface for the poached eggs.
Butter
Adds richness and flavour to the toast and softens its texture.

The step that matters

Keep the water below a boil. A rolling boil agitates the water and breaks up the egg whites before they set, so the eggs lose their shape. Holding the water at a gentle simmer lets the whites coagulate around the yolk, keeping each egg intact.
