Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Yeast cakes
Provide the living yeast that ferments the sugars and makes the starter bubble and rise.
Potatoes
Supply starch and body, giving the starter a thick, mashed base for the yeast to work in.
Sugar
Feeds the yeast, fuelling fermentation and the bubbles that form on the surface.
Hops
Add bitterness and aroma, and help preserve the starter against spoilage.

The step that matters

When lukewarm, stir in the yeast mixture. Yeast is killed by high heat, so the potato mixture must be lukewarm, not hot, before the yeast goes in. Too hot and the starter will not ferment.

Swap the potato

How well each one fits the dish's main ingredients (sugar, ginger, hops):

  1. Mustardfits better
  2. Capsicumfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against sugar, ginger, hops. Candidates are from the same food group and used in at least 100 recipes.
