Blanc-mange

Ingredients

Directions

Prepare the gelatine

  1. Soak the isinglass in a pint of cold water for 2 hours.

  2. If using shredded gelatine, soak it in ¾ cup of cold water for 1 hour.

  3. Remove the isinglass from the water and pat it dry.

  4. Melt the isinglass in a tin cup over boiling water.

Make the blanc-mange

  1. Sweeten and flavor the cream with sugar and vanilla.

  2. Stir the melted isinglass into the cream.

  3. Wet the moulds.

  4. Pour the mixture into the moulds.

  5. Place the moulds on ice.

Color and set

  1. Add spinach juice to some of the blanc-mange for green color.

  2. Add scoke-berry to some of the blanc-mange for pink color.

  3. Tilt the half-pint moulds in a pan of snow or crushed ice.

  4. Color one-fourth of the blanc-mange pink.

  5. Color another fourth green.

  6. Pour a little of each colored portion into each mould.

  7. Keep the uncolored blanc-mange warm until the colored portions are set.

  8. Fill the moulds with the white blanc-mange.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatine that sets the cream into a firm, sliceable dessert when chilled.
Cream
Provides the rich body and fat that give the blanc-mange its smooth texture.
Sugar
Adds sweetness and balances the richness of the cream.

The step that matters

Melt the isinglass fully before stirring it into the cream. Gelatine only sets properly when fully dissolved. Undissolved specks or lumps leave a grainy texture, and gelatine that is too hot or added too quickly can weaken the set.
