What each ingredient does

Oatmeal
Thickens the liquid and gives the caudle its body as it simmers for hours.
Sugar
Adds sweetness and balances the acidity of the lemon juice.
Stoned raisins
Add sweetness, body and fruity flavour as they soften in the liquid.
Lemons
Add acidity and aroma from the rind and juice, brightening the sweet base.
Madeira or sherry
Adds fortified wine flavour and warmth to the finished drink.

The step that matters

Boil the oatmeal base for 4 hours. Long simmering lets the oatmeal starch fully swell and thicken the liquid and extracts flavour from the spices. Stopping early leaves a thin, raw-tasting caudle with a starchy edge.
