Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Releases flavor and gelatin into the water as it simmers, giving the broth body.
Raw rice
Releases starch as it cooks, slightly thickening the broth.
Onion
Adds aromatic sweetness and depth to the broth as it simmers.

The step that matters

Skim just before it boils. Foam and fine impurities rise to the surface as the water heats. Skimming them early keeps the broth clearer and cleaner-tasting.
