What each ingredient does

Veal fillet
Forms the main body of the dish and becomes tender through long, gentle boiling.
Stuffing
Fills the cavity left by the bone, adding moisture and flavour to the meat as it cooks.

The step that matters

Boiling until tender. Veal needs a long, gentle simmer for the connective tissue to soften. Testing with a knitting needle shows whether the centre has become tender enough to serve.
