Velvet Cream

Ingredients

Directions

Make the cream

  1. Soak the gelatin in milk.

  2. Prepare the gelatin with the scalded cream as directed in previous cream recipes.

  3. Stir the sugar into the cream over low heat until the gelatin dissolves.

  4. Remove from heat and beat the mixture until light.

Flavor and set

  1. As the cream cools, gradually add the flavoring extract or rose-water while beating.

  2. Beat the egg whites until very light and fold them into the cream until evenly mixed.

  3. Pour the mixture into wet molds.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the cream into a firm, sliceable structure as it cools.
Egg whites
Whipped into the cream to add lightness and a airy, delicate texture.
Scalded cream
Provides fat and richness, giving the set dessert its smooth mouthfeel.
Sugar
Sweetens the cream and balances the flavor of the set dessert.

The step that matters

Beating the egg whites and folding them in. Whites must be beaten until very light so they hold air; overmixing after folding deflates them, leaving a denser, less airy set cream.
