Vinegar-pickle
Ingredients
Directions
Boil 6 quarts of water with 1 pint of coarse salt until clear, then let it cool.
Soak the pickles in the brine for several hours, then drain and wipe dry.
Prepare alum-water by dissolving 1 teaspoon of powdered alum in 1 quart of boiling water.
Scald the pickles in the alum-water for several hours without boiling.
Transfer the pickles to ice-cold water until completely cold.
Layer grape-vine leaves and pickles in a pickling kettle, pour the alum-water over them, and heat slowly without boiling.
After several hours, remove the pickles and place them in ice-cold water until cold.
Mix the vinegar with the ground spices and pour over the pickles.
