What each ingredient does

Indian meal
Cornmeal starch swells in hot milk, thickening the liquid into a porridge-like consistency.

The step that matters

Stirring the paste into the boiling milk. Adding the meal as a smooth paste, and stirring constantly, keeps starch granules dispersed so they swell evenly instead of clumping into lumps.
