Ingredients

Directions

Prepare

  1. Cut the mutton into small pieces and break up the bones.

  2. Pack the meat and bones in a soup kettle and cover with cold water.

Simmer

  1. Let it stand until the juice begins to draw, then fill with more cold water.

  2. Heat gradually until it reaches a steady simmer, and maintain for three hours.

  3. Skim the broth carefully if serving the same day and keep covered.

Finish and season

  1. About 45 minutes before serving, add the rice and onions. Stir well after adding the rice.

  2. After 20 minutes, season with salt, pepper, and optional spices to taste.

What each ingredient does

Mutton
Provides the meat flavour and richness that give the broth its body.
Rice
Releases starch as it cooks, thickening the broth and adding body.
Onions
Add sweetness and aromatic depth to the simmering broth.

The step that matters

Heat gradually to a steady simmer. Heating slowly lets the juices draw out of the meat and bones gradually, producing a clearer, more flavourful broth. Boiling hard makes the broth cloudy and can toughen the meat.

Swap the celery

The recipe marks celery as optional. How well each one fits the dish's main ingredients (mutton, rice, onion, pepper, mint):

  1. Turmericfits better
  2. Cuminfits about as well
  3. Parsleyfits about as well
  4. Celerythe original

Fit is the average pairing score against mutton, rice, onion, pepper, mint. Candidates are from the same food group and used in at least 100 recipes.
