Why it works: Oyster and sauce are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 2,233 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Boiled Veal
Ingredients
Directions
Prepare
Remove the bone from the fillet of veal.
Prepare stuffing as you would for roast meat and fill the cavity left by the bone.
Tighten the ends of the meat with a needle and coarse strong thread.
Scald and flour a cloth, then wrap the meat tightly in it.
Boil and serve
Boil the wrapped meat for three hours or until tender, testing with a knitting needle.
Serve with oyster sauce.

What each ingredient does
- Veal fillet
- Forms the main body of the dish and is cooked until tender through long boiling.
- Stuffing
- Fills the cavity left by the bone, adding moisture and flavour inside the meat.
The step that matters
Boil the wrapped meat until tender. Veal is lean, and boiling it gently over a long period breaks down connective tissue without drying it out. Testing with a knitting needle shows when the centre has softened, so the meat is not served underdone.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
