Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the cream into a firm, sliceable shape as it cools.
Egg whites
Whipped into the cream to add lightness and a frothy, airy texture.
Scalded cream
Provides richness and a smooth, creamy mouthfeel.
Sugar
Adds sweetness and balances the richness of the cream and gelatine.

The step that matters

Dissolve the gelatine and stir in the sugar over low heat. Gelatine needs gentle heat to dissolve fully; overheating can weaken its setting power, and boiling can leave the mixture grainy or unevenly set.
