Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Mix and shape

  1. In a large bowl, combine the chopped beef, cracker or bread crumbs, beaten eggs, milk, black pepper, red pepper, and salt. Mix well until all ingredients are combined.

  2. Transfer the mixture to a deep baking dish.

Bake

  1. Bake for 2 hours.

  2. If the loaf seems to dry out, pour ½ cup of water over it during baking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main body and savory flavor of the loaf.
Eggs
Bind the mixture so the loaf holds its shape when sliced.
Cracker or bread crumbs
Absorb liquid and help keep the loaf tender rather than dense.
Milk
Adds moisture and softness to the meat mixture.

The step that matters

Watching for dryness during the 2-hour bake. Lean-free ground meat loses moisture as it cooks for a long time, so the loaf can dry out. Adding water during baking helps keep the interior moist, as the record advises.
