Chicken Salad

Why it works: Lettuce and radish share more aroma than cooks usually use. They rank in the top 2% of all ingredient pairs, and cooks put them together in 58 recipes. Both carry trans-2-hexenal, which smells green, leafy. The science ↓

Chicken Salad

Ingredients

Directions

  1. Once the boiled chicken is cold, cut it into ¾ inch pieces.

  2. If the chicken will sit for a while, place it in a bowl and cover with a damp napkin.

  3. Cut the celery into ¾ inch pieces and place it in a bowl of cold water if it will sit.

  4. Mix the salad just before serving to maintain freshness.

  5. For added flavor, mix a little whipped cream into the mayonnaise.

  6. Serve the salad on crisp lettuce, garnished with olives, radishes, slices of hard boiled eggs, and nasturtiums.
