Yeast and Bread

Ingredients

Directions

  1. Soak the yeast in tepid water.

  2. In a bowl, mix flour, sugar, and salt, then slowly pour in boiling water and let cool.

  3. Add the yeast mixture and let stand in a warm place for 2-3 hours until light.

  4. Boil the potatoes, then wash them through a colander.

  5. Add boiling water and cold water to the potatoes, then let cool.

  6. Combine the cooled potato mixture with the yeast mixture and let stand in a warm place for 12-24 hours until foamy.

  7. Stir well and transfer to quart glass jars, sealing the tops, and store in a cool place.

  8. To make bread, take a jar of yeast, let it warm, then pour into a bowl and stir in enough flour to make a stiff batter.

  9. When light, mix in additional flour, sugar, and shortening if desired.
