Brown Muffins

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, beat the eggs.

  3. Melt the butter and lard, then pour over the beaten eggs and mix well.

  4. In another bowl, sift together the Graham flour, baking powder, and salt.

  5. Add a little bran to the dry ingredients and mix.

Mix and bake

  1. Combine the wet and dry ingredients, then add the milk and mix until smooth.

  2. Pour the batter into a well-greased warm pan.

  3. Bake for about 20-25 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set in the oven.
Graham flour
Forms the main structure of the muffins and gives them their brown, nutty flavour.
Baking powder
Releases gas in the batter so the muffins rise and become light.
Butter and lard
Add fat for tenderness and richness in the crumb.
Milk
Hydrates the flour and dissolves the dry ingredients into a smooth batter.

The step that matters

Pour the batter into a well-greased warm pan. Greasing prevents sticking, and a warm pan starts the batter cooking right away, helping the muffins rise evenly and release cleanly once baked.
