Why it works: Milk and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Corn and Rice Pone
Ingredients
Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Make the batter
In a bowl, combine 1 ⅔ cups of well-cooked rice with enough sweet milk to fill the measure.
Add a piece of butter the size of an egg and 1 teaspoon of salt; heat until the butter melts.
Stir in 3 beaten eggs, ½ cup of cornmeal, and 1 teaspoon of baking powder until well combined.
Bake and serve
Pour the mixture into a greased baking dish and bake at 400°F (200°C) for 30 minutes.
Serve in the dish it was baked in, using a spoon.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Eggs
- Bind the batter and help set the pone as it bakes.
- Cornmeal
- Gives the pone its body and a grainy, tender crumb.
- Baking powder
- Releases gas in the batter so the pone rises and lightens.
- Well-cooked rice
- Adds bulk and a soft, moist texture to the pone.
- Butter
- Adds richness and fat for a tender, flavourful crumb.
